We will have a tour of the warehouse, vendor displays and educational seminars.

The educational component will be on the history of Sous Vide and it’s current application in modern food service. Is it just a flash in the pan or it the trend here to stay. There will be a hands on demonstration cooking salmon in various states of brining and temperature/time control while explaining the delicate relationship that time and temperature must be closely monitored to avoid any harmful pathogens.

President's Message for March 

Hello everyone, I hope this message finds you and yours safe and dry. It looks like we are finally getting some much needed rain, like it or not. I do feel bad for those visiting our city looking for that great southern California sunshine. However our farmers really can use all of this extra help. I hope you were able to make our Sunday Brunch General Meeting at the Elks Club, with our host Executive Chef Ralph Ford and Joaquin Cueva. It was a big hit! We had an excellent turnout with perhaps only a small change needed in the starting time. I think we could get an even higher turnout by starting at 10:a.m. instead of 9:a.m. Ralph and Joaquin with the help of their staff and Chefs de Cuisine student volunteers put on a great buffet. This was a very nice change and I hope that we will do it again in the future. Our next General meeting will be at Specialty Produce with our host Roger Harrington. On Sunday March 28th from 2:p.m.untill 6:p.m. Vice-President David Chenelle and Roger have several educational seminars set and you will be able to have a nice tour of Specialty Produce and some excellent food all for the price of $10.00 dollars which will all be going to the Chefs’ Association, thanks to Specialty Produce. There is also going to be a great opportunity for student culinarians to join the Chefs de Cuisine of San Diego. All they have to do is pay the ten dollar dinner fee and their membership will be paid for in full for one year by a Chefs de Cuisine member. Get the word out to any student culinarians that you know. What a great opperituitiny to join the Chefs de Cuisine for only $10.00. I sorry for such a short report. I have several other things to report on (Tower after Hour, Learning for Life Culinary Post, the first in the nation, Fallen Officers Breakfast and the St Patrick’s Day Parade) but I’m very late getting my reports to David Morse.
