Una receta de la abuela de Ryan y Wyatt Doyle.
Amarillos en Dulce
3-4 ripe plantains cut in 3-4 inch slices
Fry till brown, place in baking dish
Sauce-1/4 cup
1 stick butter
cooking wine 1/4 cup (white)
cinnammon to taste
1 cup sugar
Heat butter, add wine heat thoroughly, add sugar until dissolved. Then add cinnamon
When all mixed, pour over plantains.

Paella
olive oil
1 to 1 1/2 lbs of boneless skinless chicken
1 medium onion chopped
1 clove garlic chopped
3 cups water
1 &1/2 cups uncooked white rice
salt, paprika, pepper and saffron to taste ( Don't forget the saffron- it makes the rice yellow) You can also add ground red pepper to taste. My husband adds sauteed jalapenos. I add green peas.
Sliced tomatos as many as you want
1 lb. clean raw shrimp
(You can also add mussels, clams)
(Steam the clams and mussels and leave in shells before adding to paella.)
Heat oil. Cook chicken. Remove chicken. Cook and stir onion and garlic in oil until onion is tender. Stir in water and rice and spices, plus tomatos. Add chicken. Heat to boiling. Then add shrimp and clams. Cover and simmer about 5 minutes. Add peas. Cover and heat until hot.
I do not follow recipes, so I do not write them either. This is my version to do with as you like.

Salade composee mit deutschem Kartoffelsalat
This is half in French and half in German. A composed salad is not mixed or tossed. The ingredients are arranged separately on a platter to show off all of the beautiful colors. Usually for warm weather, but I like it in every season. This is how I sometimes do it. I do not measure. I taste. I only taste on a spoon, not dipping the spoon into everyone else's food. First I make the German potato salad. I boil potatos and add finely chopped onions to the mixture, after I have chopped up the potatos a little. I prepare a mixture of olive oil, dijon mustard, pepper and salt, and stir it. I dump this on the potato salad and toss it. I get a platter and after I have washed the romaine lettuce, I arrange the romaine leaf by leaf on the platter. I put the white potato salad in the middle. Then, I might shred a bunch of raw carrots and arrange them on the platter. Then, I might add raw or cooked beets. Then I finely chop green, yellow and red peppers, and add them somewhere.I might broil some asparagus,or make green beans (fresh) and add almonds. I will stick them somewhere , but not together. I might add some frijoles negros and some salsa somewhere. With the salsa I might add some sour cream to the side. Sometimes I add grated cheese. Sometimes I cook collard greens. I might add some yellow corn. I will add anything with color that I know my family likes to make a pretty and healthy presentation. Sometimes I add a portion of tabouli, or hummus, or chick peas, or green peas. Then I make a vinagrette and at the last moment, I sprinkle it on everything, but the potato salad. The best vinagrettes that I have ever made have been from the Middle East. Lemon juice, olive oil and spices. Experiment and have fun.
