Seven Women's Blessed Assurance

The first woman said, One thing about me,
I'm little and low, I find me a man wherever I go.

The second woman said, they call me string bean cause I'm so tall.
Men see me, they ready to fall.

The third woman said, I'm fat as butter and sweet as cake.
Men start to tremble every time I shake.

The fourth woman said, I'm young as morning and fresh as dew.
Everybody loves me and so do you.

The fifth woman said, I'm little and lean, sweet to the bone.
They like to pick me up and carry me home.

The sixth woman said, When I passed forty I dropped pretense,
cause men like women who got some sense

But the seventh woman is my favorite, for obvious reasons.

For those of us who want to cut back a little on calories, here is a recipe for "Crustless Pumpkin Pie". (I know, I was skeptical, too!)

Crustless Pumpkin Pie

Shopping List

1 can (15 ounces) solid-pack pumpkin, 1 can (12 ounces) evaporated skim milk, Egg substitute equivalent to 2 eggs plus 2 egg whites, sugar substitute equivalent to 3/4 cup sugar (I used Splenda), 1 teaspoon cinnamon, 1/4 teaspoon allspice, 1/4 teaspoon ginger, 1/8 teaspoon salt, 1/2 cup reduced-fat graham cracker crumbs, Lite or Fat Free Whipped topping and additional cinnamon for dusting (optional).

Spray a 9 inch pie plate with nonstick cooking spray. In a mixing bowl, combine the pumpkin, milk, egg substitute, egg whites and sugar substitute; beat until smooth. Add the spices and salt; beat until well mixed. Stir in graham cracker crubs. pour into pie plate. Bake at 325 degrees for 50-55 minutes or until a knife inserted near the center comes out clean. Cool completely. Garnish with a dollop of whipped topping and sprinkling of cinnamon if destire. Store in the refrigerator. It really is good at only 109 calories per slice and 2 g of fat!



Oven French Toast

Paula's Recipe served at the PJ Party

8 oz loaf French bread, 12 large eggs, 2.75 cups whole milk, 2.75 cups half and half (can be non-fat), 2 tsp vanilla, .25 tsp nutmeg, 1 tsp cinnamon, 12 T softened butter, 2 cups light brown sugar (if desired, substitute maple syrup for some of the brown sugar), 4 T dark corn syrup, 2 cups nuts(if desired), Butter, Maple syrup

Cut bread into 1 inch thick slices. Fill a heavily greased rectangular baking pan to the top with bread slices. In a bowl, combine eggs, milk, half and half, vanilla, nutmeg and cinnamon. Pour mixture over bread, being sure to saturate each slice, cover and refrigerate overnight. Combine butter, brown sugar and corn syrup and mix well. If desired, heat in a saucepan over the stove or warm in the microwave until melted. Stir in nuts and spread mixture evenly over bread. Bake at 350° for 40-55 minutes until puffy and golden. Knife inserted in center should come out clean. Let it rest a few minutes before serving. Serve with butter and warm maple syrup.
