Frog Eye Salad
    1 cup uncooked small round pasta (acini de pepe)
    1 sm. can mandarin oranges
    1 (6oz) can crushed pineapple
    1 c. mini marshmallows
    1 c. sugar
    3 eggs beaten
    3 Tbs. flour
    1 large carton Cool Whip
Cook pasta rinse in cold water and drain. Set aside. Drain oranges and pineapple juice into saucepan. Add sugar, eggs, flour and cook until thick. Cool. Combine pasta, fruit sauce and whipped topping in LARGE bowl. Chill a few hours before serving. NOTE: When round pasta is cooked it resembles Frog Eyes. The kids love it. I always try to fix it the day before I need it. It sets up great overnight. ENJOY!! Becki Bromley Date Spread
    1 Tbsp. Mayonnaise
    1-8 oz. pkg. cream cheese, softened
    8 oz. crushed pineapple, drained
    8 oz. chopped, dried dates
    1/2 c. toasted pecans or almonds, chopped
    1/2 tsp. ginger
Mix Mayonnaise and cream cheese until smooth. Add in the rest of the ingredients. Mix well. Let stand in refrigerator for at least 2 hours. Great with Ginger Snap cookies!!! Debbie Wilson
