SUGGESTED RECIPES FOR THE SALAD & DESSERT LUNCHEON


STRAWBERRY PRETZEL SALAD
In a lower-carb, lower-cal version...

FIRST LAYER
2 cups coarsely crushed pretzels
1/2 cup melted SmartBalance or equivalent
3 tablespoons Splenda

SECOND LAYER
1 (8oz) pkg cream cheese (or neufchatel, has 1/3 less fat)
1 cup Splenda
2 cups whipped topping (small container)

THIRD LAYER
S/f strawberry flavored gelatin, equivalent to the large box of regular strawberry gelatin
2 cups boiling water
1 (10 oz) box frozen (or fresh!) strawberries

Preheat oven to 400 Fahrenheit.
Combine ingredients for first layer and spread into a 9x13x2-inch pan. Bake 8 minutes. Remove to cool.
Second Layer - Beat Splenda into cheese, stir in whipped topping. Spread over cooled pretzels.
Third Layer - Mix gelatin, boiling water and strawberries together and set aside 10 minutes. Pour over cheese mixture; chill thoroughly.

This is completely delicious! If you are taking a dish to a potluck dinner or picnic, this is a good one. Totally goof-proof!



SEVEN LAYER SALAD

Ingredients
1 pound bacon
1 large head iceberg lettuce - rinsed, dried, and chopped
1 red onion, chopped
1 (10 ounce) package frozen green peas, thawed
10 ounces shredded Cheddar cheese
1 cup chopped cauliflower
1 1/4 cups mayonnaise
2 tablespoons white sugar
2/3 cup grated Parmesan cheese

Directions
1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
2. In a large flat bowl, place the chopped lettuce and top with a layer of onion, peas, shredded cheese, cauliflower and bacon.
3. Prepare the dressing by whisking together the mayonnaise, sugar and Parmesan cheese. Drizzle over salad and refrigerate until chilled.


FRESH BROCCOLI SALAD

Ingredients
2 heads fresh broccoli
1 red onion
1/2 pound bacon
3/4 cup raisins
3/4 cup sliced almonds
1 cup mayonnaise
1/2 cup white sugar
2 tablespoons white wine vinegar

Directions
1. Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
2. Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well.
3. To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.



EASY BANANA PUDDING

Ingredients
1 (5 ounce) package instant vanilla pudding mix
2 cups cold milk
1 (14 ounce) can sweetened condensed milk
1 tablespoon vanilla extract
1 (12 ounce) container frozen whipped topping, thawed
1 (16 ounce) package vanilla wafers
14 bananas, sliced

Directions
1. In a large mixing bowl, beat pudding mix and milk 2 minutes. Blend in condensed milk until smooth. Stir in vanilla and fold in whipped topping. Layer wafers, bananas and pudding mixture in a glass serving bowl. Chill until serving.



COKE SALAD DESSERT

•1 can crushed pineapple
•1 can Bing cherries
•16 oz. Coke
•1 cup pecans
•jello
Drain juice from pineapple and cherries into a pan. Add enough water to make 2 cups liquid. Heat to boiling. Stir in jello and Coke. Set in refrigerator until slightly thickened. Stir in cherries, nuts and pineapple. Let set until firm.



EASY QUICK PEACH COBBLER

Ingredients
•1 cup melted butter
•1 cups sugar
•1 large can peaches in heavy syrup
•3/4 cup milk
•3/4 cup flour
•1 tsp. baking powder
Here is what to do:
Preheat your oven to 350 degrees F. Place the melted butter in a pan. Mix the sugar with the flour and baking powder together. Add the milk and beat until smooth. Pour over top the melted butter. Do not stir.
Pour in the canned peaches, along with the juice, over the batter. Do not stir. Bake until the cobbler is browned and waxy.

The Chalice is a symbol of the
Christian Church (Disciples of Christ)

The symbol of the Christian Church (Disciples of Christ) is a simple red chalice bearing the Cross of St. Andrew across the
left side of the bowl. The chalice points to the centrality of the Lord's Supper in the life and worship of the Disciples who
celebrate Communion each Sunday. The Lord's Supper is open to Christians of all persuasions and has been characteristic of
the church from its beginning in the early nineteenth century. The Cross of St. Andrew, national cross of Scotland, focuses
attention on the Presbyterian roots of the Christian Church Disciples of Christ). The color red signifies vitality, spirit
and sacrifice.
